The leaves have a marked, but agreeable aroma and pungent flavor. They are used fresh or dried for seasoning clam chowder and other fish soups, as well as stews, sauces and meat dishes. Thyme is noted for attracting bees.

Suggestions: For drying leaves, cut entire plant to 2 inches above ground just before it flowers in early summer. Dry leaves in the shade. Thyme will thrive as a potted plant.
